How to BBQ Mackerel – Quick And Easy! (NO foil!)
Mackerel is a beautiful fish to BBQ because it is naturally so oily and hardy over a bed of charcoal.
At just over a £1 a fish, you really can’t get better value?
I kept things simple, took the head and tails off (the more adventurous amongst you will no doubt prefer to keep these on!) and cut a few slits into the fish before I threw together a very basic marinade using:
- 2-3 tablepspoon of Olive oil
- A small amount of melted butter
- 1/2 a tablespoon of Sea Salt
- 2 cloves of fnely chopped garlic
- a little lemon juice
Whisk all the ingredients above together and rub it into the slits on the fish (oooo errr matron!) and into the belly cavity. Then all you have to do is pop the fish directly onto the grill (don’t use foil for this fish, it’s hardcore and won’t break up!) for about 5-6 minutes each side, making sure the meat turns opaque.
Add a little lemon juice before service to give it a little kick and serve it with salad and crusty bread!
BBQ Pork Tenderloin – Take 2
I love cooking a Pork Tenderloin on a BBQ; at £5 a pop, they’re fantastic value for money and are very versatile with regards to adding sauces and spices!
I blogged some time ago about cooking a sage and onion rubbed pork tenderloin; this time I opted to use some more of the Kansas City Cattlemens Classic BBQ sauce and it worked a treat.
One word of advice though, make sure you slit the loin a few times to let the marinade soak into the meat and allow the flames to cook it thoroughly. Tenderloins have a tendency of retaining a lot of juice which can make you underestimate the cooking time that is involved.

Jamie Oliver Party Oil Drum BBQ – Fired up!
I fired up my new BBQ for the first time this weekend, really pleased with it and impressed on how amazingly hot this thing can get with even the smallest amount of charcoal!
The drum was moderately filled and I am still unable to put the cover on it this morning because of how how it still is!
Fierce!
Cattlemen’s Masters Reserve BBQ Sauce – Kansas City Classic
I picked up some award winning Cattlemen’s Masters Reserve BBQ sauce in Costco a couple of months ago; I remember seeing the brand in Walmart and thought I’d grab it because quality BBQ sauces are truly scarce in the UK.
I got a good deal, £5 for two huge jars of Kansas City classic sauce!
The gauntlet was well and truly thrown down this weekend as I fired up my new BBQ for the first time, I marinaded the ribs for a couple of hours in a roasting tray along with a few pieces of chicken.
It’s not such a secret these days thanks to TV cooking shows, but adding a little coke (the drink, not the class A drug) to the mix is a fantastic way to bring out the best in the sauce and the meat!
Have to say, it was amazing having a slice of ‘home’ in my own back garden; the best thing of all is that I still have another jar 😉

Bubba Gump Shrimp – Santa Monica California 22/10/2011
There is a Bubba Gump Shrimp restauant on the Santa Monica Pier; I wanted to go there because my friend Jane and I had a bit of a running joke about Forrest Gump, and Lorraine and I were too busy shopping in New York to visit the restaurant there!
I had planned on eating fish and shrimp when in California anyway; so it was fun to be a little adventurous and go for the Lobster claws and shrimp bucket with fries. The shrimp was coated in chilli and it had a kick, amazing! Really enjoyed the lobster meat too!
Momma says I’m special!
Sonic – America’s Drive-in Restaurant
Sonic burgers are amazing.
I think I’ve spoken before about my love for going to Sonic. It’s old fashioned, you can drive up, hit the telecom button, tell someone what you want and they bring it out on rollerskates!
Well, normally they do. One poor guy made the fatal mistake of bringing out the wrong sandwich to Amy; and he got reminded about EXACTLY what should have been in her choice!
